Today’s recipe is very much Diwali inspired (this year it is on 24th October).

If I had been in the UK, my festivities for Diwali would look very different. I would most likely be trying to pop into the local Gurdwara (Sikh Temple) to pay my respects as well as feasting at home with my family.

And whether it was at the Gurdwara or at home with my Mum, I would probably eating Sooji Halwa (Semolina Pudding) and drinking masala chaa.

Sooji Halwa is an easy and rather simple pudding. In fact, it is so easy to make that even I can make it.

It is often prepared at religious events, and typically is offered to devotees at the end of prayers at the Gurdwara.

While this recipe will never quite match the magic of the Prasad that the Gurdwara or my Mum makes, it will do until I can get home again.

But quite honestly, it is tasty. If it wasn’t I wouldn’t be sharing it with you.

Ingredients

  • 0.5 Cup Semolina Flour
  • 1.5 C Water
  • 0.5 C Milk
  • 0.25 C Ghee
  • 0.5 Sugar
  • 0.25 tsp cardamom powder
  • Optional add-ins: almonds, raisins

Method

Add sugar, milk and water to a pot and bring to a low rolling boil, to ensure the sugar is completely melted

While waiting for the sugar syrup to get ready, melt ghee in pan on medium low heat.

Add semolina, and continuously stir until semolina is fragrant and changes color on medium low heat.

Add the cardamom and give it a good stir

Add sugar syrup to ghee and semolina mixture. Do this slowly, as it will most likely splutter when you do this.

Keep stirring until the semolina gets thicker and starts to leave the sides of the pan.

We did it! We just made Sooji Halwa!
